Let’s cook vegan: Parsley cashew pesto

Ingredients

  • fresh parsley – 2 cups
  • cashews – 1 cup
  • garlic – 1 clove
  • lemon juice – 3 spoons
  • natural yeast – 4 spoons
  • soy sauce – 1 spoon
  • dried minced onion – 1 spoon
  • hemp oil – 1/2 cup
  • pepper – to taste

Directions

  1. Wash and dry the parsley.
  2. Blend ingredients together slowly add hemp oil (you can control the pesto density – do as you like).
  3. The prepared pesto can be poured into a jar, topped up with oil so that it covers the pesto and can be stored in the fridge.
  4. Serve with pasta, gnocchi or spread it on bread.
  5. Enjoy!
