Spinach with rice

When you need something green for a lunchtime – say yes to spinach.
Keep frozen spinach on hand for emergencies.
On a lazy day together with rice create fast and wholesome dish.

Spinach with rice

Ingredients

  • frozen spinach – 350 gram
  • red pepperΒ  – 1/2 part
  • green peas – 1/2 cup
  • yellow lentils – 3 spoons
  • garlic –Β  3 cloves
  • lemon juice – 1 spoon
  • sweet paprika – 1/2 teaspoon
  • turmeric – 1/2 teaspoon
  • pepper –Β to taste
  • olive oil – 3 spoons
  • rice – 3/4 cup
  • water – 1 and 1/2 cup

Directions

  1. Bring the water to boil. Rinse and cook rice.
  2. Heat the oil in a large saucepan, then add chopped garlic. Stir it about 2 minutes. Add spinach with lemon juice and cook about 10 minutes – until all the liquid has evaporated.
  3. Cut the pepper into cubes and together withΒ green peas andΒ yellow lentils transfer into spinach. Add spices and cook about 15 minutes.
  4. Mix spinach with rice.
  5. Enjoy!
